产广谱细菌素乳酸菌的筛选及分类鉴定

Screening and taxonomic identification for broad-spectrum bacteriocin-producing lactic acid bacteria

从多种样品中共筛选出30株乳酸菌,以大肠杆菌、金黄色葡萄球菌为指示菌,通过抑菌试验、酸排除试验、过氧化氢排除试验、蛋白酶敏感性试验等手段确定1株来自泡菜的具有较高抑菌活性的乳酸菌A8。该菌株所产抑菌物质是一种广谱细菌素,它对革兰氏阳性细菌和革兰氏阴性菌均具有较强抑制效果。结合筛选菌落特征、个体形态和生理生化特性,确定菌株A8为植物乳杆菌(Lactobacillus plantarum)。

Thirty lactic acid bacteria strains were screened from sev- eral materials. Escherichia coli and Staphylococcus aureas were de- termined the indicative strain. The inhibitory material produced by this strain which could inhibit not only gram-positive bacteria but also gram- negative bacteria was a broad-spectrum bacteriocin. A8 strain was i- dentified as Lactobacillus plantarurn by colony characteristics, indi- vidual form and physiological-biochemical characteristics.
