摘要
从多种样品中共筛选出30株乳酸菌,以大肠杆菌、金黄色葡萄球菌为指示菌,通过抑菌试验、酸排除试验、过氧化氢排除试验、蛋白酶敏感性试验等手段确定1株来自泡菜的具有较高抑菌活性的乳酸菌A8。该菌株所产抑菌物质是一种广谱细菌素,它对革兰氏阳性细菌和革兰氏阴性菌均具有较强抑制效果。结合筛选菌落特征、个体形态和生理生化特性,确定菌株A8为植物乳杆菌(Lactobacillus plantarum)。
Thirty lactic acid bacteria strains were screened from sev- eral materials. Escherichia coli and Staphylococcus aureas were de- termined the indicative strain. Lactic acid bacteria As which showed obvious antibacterial activity was isolated from pickle by antibacterial test, the test of eliminating organic acids and hydrogen peroxide, and the effect of protease. The inhibitory material produced by this strain which could inhibit not only gram-positive bacteria but also gram- negative bacteria was a broad-spectrum bacteriocin. A8 strain was i- dentified as Lactobacillus plantarurn by colony characteristics, indi- vidual form and physiological-biochemical characteristics.
