摘要
采用氨基酸自动分析仪,对不同成熟度椰子(椰青、嫩椰子、成熟椰子)的椰汁及其椰子水饮料中17种氨基酸组分和含量进行分析。从中检测到丙氨酸、甘氨酸、缬氨酸、亮氨酸、异亮氨酸、脯氨酸、天冬氨酸、苏氨酸、丝氨酸、蛋氨酸、谷氨酸、苯丙氨酸、赖氨酸、酪氨酸、胱氨酸、组氨酸和精氨酸。结果表明:椰青、嫩椰子、成熟椰子水和椰子水饮料中,氨基酸含量丰富,谷氨酸、丙氨酸和天冬氨酸均为主要氨基酸,占总氨基酸含量的比例分别为69.51%,60.24%,49.65%,65.08%。而且椰子水含有非常丰富的必需氨基酸,依次为嫩椰子水24.15mg/100g,成熟椰子水17.5mg/100g,椰青椰汁14.7mg/100g,椰子水饮料10.39mg/100g。
The amino acids were analyzed in composition and content of different maturity coconut water (young coconut, tender coconut, mature coconut) ,as well as the coconut water beverage. Quantitative and qualitative determination was performed by amino acids analy zer. The amino acids were obtained, including alanine, glycine, valine, leucine, isoleucine, proline, aspartate, threoine, serine, me thionine, glutamic acid, phenylalanine, lysine, tyrosine, eystine, histidine and arginine. The result showed that total amino acids of coconut water were rich in young coconut, tender coconut, mature coconut, coconut water beverage, in which glntamie acid, alanine and aspartate were the main amino acids, accounted for the propor- tion of total amino acid content were: 69.51%, 60.24%, 49.65%, 65.08%, respectively. And coconut water was very rich in essential amino acids, the content (rag/100 g) in order was 24. 15, 17. 5, 14.7, 10.39.
