摘要
以锦灯笼为主要原料,经过打浆取汁后添加蜂蜜进行混合调配,研制锦灯笼蜂蜜复合型饮料。本试验通过单因素试验和L9(34)正交试验对影响产品品质的锦灯笼浆液添加量、蜂蜜添加量、白砂糖添加量、柠檬酸添加量等几个因素进行了研究,确定了锦灯笼蜂蜜复合饮料的最佳配方。研究结果表明:当锦灯笼浆液添加量为15%,蜂蜜添加量为5%,白砂糖添加量为5%,柠檬酸添加量为0.04%,CMC添加量为0.10%时,所得的产品风味独特,鲜纯爽口,营养丰富。

This test by single factor experiment, and then L9 (34) orthogonal experiment, the affecting the quality of the product brocade lanterns adding amount of slurry additive quantity, sugar, honey adding amount, citric acid additives and so on several factors are studied, sure jin lanterns honey composite drinks the best formula, the results of the study showed that: when jin lanterns grout add content was 15 %, adding amount of honey for 5 %, sugar added content is 5 %, citric acid add content was 0.04 %, CMC add content was 0.10 %, the product unique flavor, bright pure and refreshing, rich in nutrition.
