摘要 以红牡丹为原料,用树脂法提取红牡丹色素,分别研究酸度、温度、光照、氧化剂、金属离子和还原剂对其稳定性的影响.结果显示:红牡丹色素在酸性环境中有较好的稳定性,但不适宜高温、光照处理,抗氧化性和抗还原性较差,金属离子K+,Mg2+,Ca2+,Cu2+,Al3+对其无明显影响,而Zn2+,Fe3+对色素有破坏作用. Taking Paeonia suffruticosa as the subject to get Paeonia suffruticosa pigment by resin extraction, research studied respectively the effect of experimental conditions such as extractive acidity, temperature, light, oxidant, reducer and the metal ion on red Paeonia suffruticosa pigment stability. The Paeonia suffruticosa pigment showed good stability under the acidic conditions but unstable at high temperature or day- light. Meanwhile, the Paeonia suffruticosa pigment also displayed bad antioxidant and antireductive activities. Several metal ions such as K+ ,Mg2+ , Ca2+ , Cu2+, Al3+ has no influence on the stability of pigment but Zn2+ or Fe3+ are destructive to the pigment.
