摘要
为探索气调热泵干燥特性,以胡萝卜为试验材料,研究干燥温度和N2浓度对胡萝卜干燥特性的影响。研究表明:干燥时间随着温度及N2浓度的升高而减少;在研究温度范围内,复水率随着温度及N2浓度的升高而增大,色差随着N2浓度的升高而减小。
In order to explore the modified atmosphere drying characteristics, the drying temperature and mixed gas of N2-air were investigated. Drying time, rehydration capacity and colour of the carrots were compared. Results showed that the increase of drying temperature and N2 concentration decreased the drying time. High rehydration capacity and less colour change occurred when N2 concentration increased.
