摘要 叶黄素(lutein)又名植物黄体素,是一种含氧类胡萝卜素,含紫罗酮环和多个不饱和双键。广泛存在于自然界中,是构成蔬菜、水果、花卉等植物色素的主要组分。叶黄素是构成人眼视网膜黄斑区域的主要色素,对维持眼部健康有一定作用。此外,大量研究发现叶黄素对心血管疾病、癌症、糖尿病等多种慢性疾病有一定预防和改善作用。鉴于叶黄素无毒安全,具有较强抗氧化、改善视力等生理功能,已被作为食品补充剂允许在食品、饮料、化妆品、保健食品,甚至婴幼儿食品中添加。
