摘要
基于我国陕西、云南、贵州3个西部省份的实地调研数据,从营养摄入的角度考察贫困地区农户的食物营养安全状况,并将能量、蛋白质、脂肪摄入量综合起来衡量和评价食物营养安全水平,同时划分出能量安全,但蛋白质、脂肪不安全的分布区域。研究发现,仍有2成左右的样本农户存在能量摄入不足的情况,仅有接近一半的农户能量、蛋白质、脂肪的摄入量都达到推荐水平,蛋白质摄入不足情况最为突出;此外,能量与蛋白质、脂肪摄入水平体现出区域的不一致性。
This paper aimed to evaluate the nutritional levels of households in west rural China by calculating the nutrients intakes based on the households data obtained from field surveys in Shanxi, Yunnan, and Guizhou provinces. Energy security but protein and fat insecurity areas were clarified by using a comprehensive assessment method considering energy, protein, and fat intakes. The analysis showed that there were nearly 20% of the sample households suffered from energy insecurity, no more than half of the households could a- chieve the recommended intake levels of energy, protein, and fat at the same time. Problem of inadequate intake of protein was the most prominent. A significant spatial inconsistence showed in the nutrients intakes levels.
