摘要
采用紫外-可见分光光度法研究了天然染料红米红色素对pH、温度、光照时间、羧酸改性、金属离子的稳定性名吉果表明:红米红色素在pH=2-4较稳定;温度、光照跗间、羧酸改性及碱性条件对稳定性影响较大;Mg^2+、Al^3+、Zn^2+对红米红色素的光谱波形影响不大,Fe^3+对波形有影响,色素颜色改变.
The stability of red rice red pigment under different conditions such as pH, temperature, expo- sure time, carboxylic acid-modification, metal ions was investigated by UV-Vis spectrophotometric method. The results showed that the red rice red pigment was stable when the pH was 2-4; temperature, exposure time, carboxylic acid-modification and alkaline condition had effect on its stability; Mg2+, AI3+ and Zn2+ had little effect on the spectral waveform of red rice red pigment, and Fe3+ affected both its waveform and color.
