摘要
凯氏定氮法作为测定蛋白质的经典方法在食品检测中应用很广,然而其操作过程相对复杂,但只要对其分析过程中的具体细节加以严格控制,就能提高分析结果的准确度,从而得到令人满意的结果。本文就奶粉检测过程中称量、消化、蒸馏及滴定等需注意的环节作了细致的分析和总结,望能为从事相关行业的人员提供一些有益的参考。
