摘要
简要介绍了计算流体动力学(CFD)在食品热处理中的求解过程、软件结构及常用软件,并对CFD模拟食品焙烤与热杀菌过程的相关研究进行了综述,同时总结了CFD的优点与不足,并展望了其在食品热处理中的发展与应用前景。
In this paper,a brief introduction of the solving process,software structure and some related software of computational fluid dynamics( CFD) in food thermal processing were given,and application of CFD in baking and thermal sterilization were reviewed. In addition, the advantages and disadvantages were summarized, and the development of CFD in food thermal processing was also outlined.
