摘要
四川眉山为东坡故里,被誉为"中国泡菜之乡",东坡泡菜已成为眉山名片。对"东坡泡菜"生产中存在的危害进行科学分析,从而提出切实有效的控制措施,为泡菜生产企业利用HACCP体系进行科学有效的品控管理提供理论支持。
As SU Dongpo's hometown,Meishan in Sichuan province is known as Chinese pickle's cradle.And Dong-po pickle has been an iconic product in Meishan.In this paper,through the scientific hazards analysis for Dong-po pickle,effective control measures were put forward,providing theoretical basis for the pickle-producing enterprises in scientific and effective quality control management ways using HACCP system.
