摘要
介绍了一种新的测定蛋白质水解度的方法 ,该方法利用待测蛋白样品的完全水解液做为茚三酮比色的标准样品测定蛋白质的水解度 ,并和常用的几种测定水解度的方法进行了比较。该种方法消除了由一种氨基酸做为对照样品所带来的测定误差 ,是一种简单易行的测定水解度的方法。
A new way to determine the hydrolytic degree of protein hydrolysates (DH) was investigated in this paper.In the ninhydrin test,sample completely hydrolated by hydrochloric acid was taken as a reference solution.Comparing with the results of several other methods usually usued,this method eliminated the error of using amino acid as the reference,which was common in the tradational way.
