摘要 本文主要介绍了酶联免疫法,胶体金法,酶催化法,酶-重(容)量法等酶工程学技术,对其在真菌毒素检测、农药残留检测、兽药残留检测、微生物检测、食品添加化学物质检测以及其它食品成分检测等方面的应用进行了综述,并展望了酶工程学在食品检验领域中的应用前景。 The enzyme- linked immunosorbent assay, coUaurum method, enzyme catalysis method, enzymeweight (volume) method etc enzyme engineering technology were introduced in this paper. Their application in the detection of mycotoxins, pesticide residues, veterinary drug residues, microbial detection, food additive chemicals and other food constituent detection were reviewed. Also the perspective of the application of enzyme engineering in food inspection was proposed.
