摘要
为了提高十里香窖泥的质量,对老窖泥中的己酸菌进行了分离纯化,并将筛选出的优质菌种进行扩大培养和应用。结果表明:添加了己酸菌的窖池产酒质量明显高于未进行处理的窖池。
In order to improve the quality of Shilixiang pit mud, caproic acid bacteria was isolated and purified from quality Shilixiang aged pit mud and then filter out high quality caproic acid bacteria strains to expand training and application. The results suggested that the liquor quality of adding the caproic acid bacteria is significantly higher than not adding he caproic acid bacteria.
