摘要 通过分析酶促凝乳硬度变化指数方程以及超声波在凝乳中的衰减特性 ,提出超声波在凝乳中衰减的指数模型。用阻尼最小二乘法进行拟合 ,求得模型中的 3个特性参数。实验结果表明 ,该模型能很好地模拟牛奶的凝固过程。与多项式模型相比 ,指数模型中的参数具有与牛奶凝固特性相关的物理意义 。 Analyzing the exponential model of coagulation of milk and attenuated characteristics of ultrasonic with characteristic behavior of milk, the relation between attenuated ultrasonic signal and time was expressed by an exponential model. The acquired data was regressed with the nonlinear method, the damped least squares, then three parameters of exponential model and regressive curve were attained. The experimental results indicated that the exponential model combined closely attenuated performance of ultrasonic and coagulating characteristic of milk. Compared with polynomial regression, the correlation coefficient is bigger with exponential model treatment. On the other hand, the regressive precision of the exponential model is promoted.
