摘要
食品质量的管理是个相当复杂的过程,包括食品及其原料复杂的特性,诸如种类的多样性、受限的货架期、潜在的安全危害以及大量的生化、物化的特性等,所以食品质量管理学是有关食品知识综合性很强的一门学科。因此,如何能够较好地进行此门课程的教学,是一个非常重要的研究课题。综述在食品质量管理学中应用广泛的教学方法,并对新的教学方法进行探讨。
Management of food quality is a rather complicated process. It involves the complex characteristics of food and their raw materials, such as variability, restricted shelf life, potential safety hazards, the large range of biochenical physical and chemical properties and so on, according this, food quality management is a comprehensive subject integrating knowledge related to food. Therefore, how to carry out course teaching has been an important research topic. This paper summarizes teaching method applied widely in food quality management, and discusses on the innovative teaching methods.
