摘要 食品添加剂是食品质量与安全专业重要的专业基础课之一,其教学目的旨在为学生正确认识并在将来正确使用或监管食品添加剂提供基础。对食品添加剂的教学内容与教学方法进行思考和探讨,在教学内容上着重指出必须阐述清楚什么是食品添加剂以及什么是滥用食品添加剂乃至使用食品非法添加物,在教学方法上则强调和论述提问式、案例式教学法在食品添加剂课程教学中的应用与效果。 Food additive is one of the important professional basic courses for food quality and safety specialty. The purpose of this course is to provide students a correct understanding and the basis for correct use or regulation of food additives in future. This paper discusses the teaching contents and teaching methods of food additives course. It should be clearly stated that what is a food additive and what is the abuse of food additives or what is the use of illegal food additives in teaching contents. At the same time, the application and effect of the question, the case teaching method in the teaching of food additives are emphasized and discussed.
