摘要
本文介绍了一种以牦牛肉为主要原料的新型复合型香辣牦牛肉酱的制作,并对产品的配方、工艺流程、原辅材料预处理及生产过程中的操作要点等方面进行了研究,其结果表明:用该生产的复合型香辣牦牛肉酱不但色泽亮丽、咸辣鲜香,而且营养丰富、滋味独特。
This paper introduces method of making a new composite savory yak meat paste with yak meat as the main raw material, and the product formula, process flow, raw and auxiliary materials processing and production process are discussed in detail in this paper, The results showed that the composite savory yak meat paste not only has bright color and good taste, but nutriention, and good flavour.
