摘要
利用氧弹式量热计测定了七种坚果果仁(开心果、松子、打瓜子、白瓜子、葵花籽、榛子、花生)的热值,△T的确定采用Origin 8.0软件进行数据处理,结果表明七种坚果果仁的热值均在24~31kJ/g范围内。本法原理简单,易操作,方法可靠,可为人们的膳食结构调整和对各种坚果果仁本身所具有的热值的确定提供一些参考。
The heat of combustion of seven kinds of nuts (pistachios, pine nuts, playing melon seeds, white melon seeds, sunflower seeds, hazelnuts, peanuts) was investigated by oxygen bomb calorimetry. Data processing and the value of AT were obtained by Originlab 8.0 software. It indicated that the heat of combustion of seven kinds of nuts was in the range 24 - 31 kJ/g. This principle was simple and the method was reliable and easy to operate, which can provide some reference values for people to adjust the food structure and determine the calorific value of nuts themselves.
