Polydextrose is a kind of water - soluble dietary fiber which has good physico- chemical properties and physiological functions. This paper focuses on the properties of polydex- trose and its advantages when using in meat products. The combination of polydextrose and meat products is a trend which can give more functional characteristics to meat products and benefit hu- man health.
