摘要
研究不同模拟体系中大米、糙米和大豆蛋白及其Alcalase 2.4L酶解产物降低胆固醇和束缚胆汁酸的生物活性。在胆固醇胶束溶液中,大米蛋白(WRP)的降胆固醇能力最低(9.7%),而大豆蛋白酶解产物(SPH)具有最高的降低胆固醇活性(18%)。在模拟胆汁酸体系中,蛋白质及其酶解产物对胆汁酸的束缚率为10%~16%,它们可在不同程度上抑制Caco-2细胞对胶束溶液中胆固醇的吸收(11%~20%)。
The hypocholesterolemic effects of white rice protein(WRP),brown rice protein(BRP),soybean protein(SP),and their hydrolysates(WRPH,BRPH,and SPH) were identified using cholesterol micellar solution and Caco-2 cell.The bile acid binding ability was indentified using artificial bile acid solution.In cholesterol micellar solution,WRP had the lowest cholesterol-lowering ability(9.7%) and SPH had the highest(18%);all the proteins and their hydrolysates had the different bile-acid binding abilities(10% -16%);in Caco-2 cell,the cholesterol-lowering abilities of WRP,BRP,SP and their hydrolysates were 11%-20%.
