Using and Development of Ice Slurry Preservation in Food Industry

摘要 流化冰作为一种新型制冷技术具有很大的发展潜力。对流化冰的组成、冰粒子特性、流化冰制备方法及在食品中的应用进行介绍,以便其在食品领域能有更广泛的应用。 Ice slurry as a new type of refrigeration technology has great potential. The composition of ice slurry, characteristics of ice particles in ice slurry, methods of making and its application in the field of food preservation were introduced, so that it can have a wider range of applications in the field of food.
