摘要
本文基于小波变换边缘奇异性分析原理,研究了糜状食品物料微结构图像的多重分形结构及其特性,求出其局部奇异性指数;并采用计算高次信息量维数的办法,建立了糜状食品物料微结构图像的多重分形奇异谱。通过分析图像的奇异谱,定义了表征不同糜状食品物料图像微结构的参量,为建立图像微结构与流变特件之间的定量描述打下基础.
In this paper, multifractal structure and its property of the microstructure image of minced food material are researched in wavelet analysis, and the local singularity is solved. What is more, the method of computing information content dimension is applied to found the multifractal singularity spectrum on microstructure image of minced food material. Through the analysis of singularity spectrum, the parameter of expressing different microstructure is denned, that make the base for modeling bedween microstructure and rheological properties.
