摘要
目的测定江西脐橙果皮及果肉中酚酸与类黄酮物质的含量。方法收集江西冬春和夏秋季节两批脐橙样品,采用高效液相色谱(HPLC)法分析和定量了7种酚酸橙皮苷及其他5种常见类黄酮的含量。结果脐橙中的可溶性酚酸含量大于不可溶性酚酸含量,酚酸以肉桂酸为主,其中以阿魏酸含量最高;其次是对香豆酸芥子酸咖啡酸。苯甲酸以对羟基苯甲酸含量最高,其次是香草酸和原儿茶酸。橙皮橙肉中均富含橙皮苷,其他5种类黄酮含量以槲皮素含量最高,其次为杨梅黄酮芹菜配基玉米黄酮及坎二菲醇。结论酚酸及类黄酮在橙皮和橙肉中的分布有差别,橙皮中橙皮苷及多种酚酸含量都高于橙肉,而其余5种常见类黄酮则较多的分布于橙肉中;两批脐橙样本中的酚酸与类黄酮物质含量因季节不同而存在差异。[营养学报,2014,36(1):74-77,83]
Objective To analyse the contents of phenolic acids and flavonoids in navel orange peel and flesh from Jiangxi. Methods Two batches of navel oranges in different seasons were collected from Jiangxi, China. The contents of seven phenolics, hesperidins and five flavonoids were determinded by high-performance liquid chromatography (HPLC). Results In the navel orange peel and flesh, phenolic acids were mainly present in soluble form, and the contents of cinnamic acids were higher than those of benzonic acids. Ferulie acids were the richest in cinnamic acids, followed by p-eoumaric acids sinapic acids, caffeic acids. P-hydroxybenzoie acids dominated in benzonic acids, followed by vanillic acids and protocatechuic acids. Hesperidins were abundant in the navel orange peel and flesh. Furthermore, contents of quercetin were the highest in five flavonoids, followed by myricetins, apigenin, luteolin and kaempferol. Conclusion The distribution of phenolic acids and flavonoids was different in the navel orange peel and flesh. The contents of hesperidin and most phenolic acids in the navel orange peel were higher than those in flesh, so flavonoids distributed more in the flesh. There are significant differences in the contents of phenolic acids and flavonoids in the two baches of navel oranges from two different seasons.
