摘要
目的奶酒中的乙醇浓度和总酯的测定按照国标是分别采用蒸馏方法完成的。本文旨在通过一次蒸馏同时完成奶酒中乙醇浓度和总酯的两项测定,从而寻找出一种省时、简便、节能、准确联合测定奶酒中乙醇浓度和总酯的检验方法。方法采用过量蒸馏,使用同一馏液对奶酒中乙醇浓度和总酯进行联合测定。结果采用本方法总酯的平均回收率超过97%;对七种奶酒酒样采用本方法与国标方法同时测定乙醇浓度,将其测定结果进行配对t检验,按α=0.20计,P>0.10,两种方法测得的乙醇浓度差异无统计学意义。结论采用本实验方法可以准确联合测定奶酒中乙醇浓度和总酯,该方法简便易于实施,适合在生产奶酒、果酒的中小型企业中推广。
Abstract: Objective To establish a time - saving, simple, energy - saving and accurate method for simultaneous determina- tion of ethanol concentration and total esters in milk wine through one - time distillation. Methods Based on excessive distil- lation, ethanol concentration and total esters were simultaneously determined in milk wine using the same distillate. Results Using this method, the average recovery of total esters was over 97% ; The determination of ethanol concentration in 7 kinds of milk wine was carried out by adopting this method and the national standard method respectively, and the determination results had no statistical difference between the two methods by paired t test, based on ct = 0.20, P 〉 0.10. Conclusion The method can accurately determine ethanol concentration and total esters in milk wine simultaneously, it is simple and easy to operate, suitable for promotion in the production of milk wine and fruit wine in small and medium - sized enterprises.
