摘要
采用比色法对草鱼(Ctencpharyngodon idellus)、鲤鱼(Cyprinus carpio)、鳙鱼(Aristichthys mobilis)、罗非鱼(Oreochromis mossambicus)的背部肌肉的羟脯氨酸含量进行了测定,结果表明,4种鱼肉中羟脯氨酸含量分别为0.0781、0.0743、0.0725、0.0724g/100g。
Hydroxyproline content in muscle of Ctencpharyngodon idellus,Cyprinus carpio,Aristichthys mobilis,Oreochromis mossambicus was determined by photocolorimetric method.The result showed the hydroxyproline content in muscle of the 4kinds of fish was 0.0781,0.0743,0.0725,0.0724g/100g respectively.
