摘要
甲醛滴定法、茚三酮法和三氯乙酸法都可以测得酪蛋白的水解度,但茚三酮法所用的显色剂稳定性差,比色时读数不稳定,而且它只采用甘氨酸这种单一的氨基酸作标准,因此这种方法不甚可取。三氯乙酸法酸溶蛋白中含有水解之前的蛋白质,所以这种方法结果偏差较大。因此,最好的测定蛋白质水解度的方法是甲醛滴定法。
The formaldehyde titration method,ninhydrin method and trichloroacetic acid method can detect the hydrolysis degree of protein,but the stability of chromogenic reagent is poor and colorimet-ric readout is unstable by ninhydrin method,which only use the single amino acid-glycine as standard, so this method is not desirable.Acid-soluble protein contains the protein before hydrolysis by trichlo-roacetic acid method,so the deviation of the result is large.Therefore,the best method for determi-nation of hydrolysis degree of protein is formaldehyde titration method.
