摘要
为解决高海拔地区食物卤煮熟化困难,直接加热易糊锅的问题,设计开发一种带压卤制装置,该装置由罐体、温度传感器、换热器、汽水混合器、蒸汽供应通道以及两道循环水路组成,采用热水外循环技术,具有蒸煮、自动控温等功能,能够实现高海拔地区食品的卤制加工,可以满足高海拔地区卤制食品加工的生产条件。
To overcome the difficulties of boiling up and pasting when heating directly of food in low pressure plateau, A pressurized appa ratus was designed and manufactured, containing a tank, tempera ture sensor, heat exchangers, steam and water mixer, steam channel and two circulating waterway systems. Combining with the use of hot water outside circulation heating technology, the device can realize cooking, automatic temperature control and other functions, and meet the requirements of food processing production conditions in high altitudes zone.
