摘要 随着人们对食用油的质量安全和营养价值的重视,对其检测技术要求也越来越精密。文章从食用油的常规检验指标出发,阐述电导法、光谱法、色谱法和质谱法在食用油质量检测方面的研究进展,展望食用油检测技术的研究方向。 As people attention more and more focused on the quality safety and nutritional value of edible oil, demanded the detection technology more and more precision. This paper starts with the normal detection indexs of edible oil, introduces current research progresses of electrical conductivity, spectroscopy, chromatography and mass spectroscopy for the quality detection of edible oil, puts the next research direction of detection technology of edible oil.
