摘要 文章简述卵磷脂的生理生化及保健特性,综述近年来国内外卵磷脂的分离提取及精制方法的研究进展,并展望卵磷脂的生产制备研究与应用前景。 Introduced lecithin＇s physical-chemical property and health function, reviewed recently progress on the extraction and refining technology of lecithin, and lecithin;s application prospects were summarized.
