摘要
针对近几年来国内外蓝莓花青苷的发展现状以及未来的发展方向,从蓝莓花青苷的化学结构、理化性质、药理活性、检测方法、制备方法以及应用现状等方面进行了综述,指出蓝莓花青苷的提取方法主要有溶剂提取法、酶提取法、超声波提取法、超临界流体萃取法等,其中溶剂提取法最常见;检测方法主要有比色法、pH示差法、差减法和高效液相色谱法;蓝莓花青苷其具有抗氧化、抗突变、抗菌及保护心血管等作用,其主要应用于食品、医药、保健品、化妆品及嗜好品工业中。
In allusion to the development status of blueberry anthocyanin at home and abroad in recent years and the development direction in the future,the research progress of anthocyanin in blueberry was summarized,including chemical structure, physical and chemical properties, pharmacological activity, preparation methods, detection methods and application status of anthocyanin in blueberry, etc. In addition,the main extraction methods of anthocyanin in blueberry were pointed out, such as solvent extraction method,enzyme extraction method,ultrasonic extraction method,supercritical fluid extraction method.Herein to,the solvent extraction method was the most common;the detection methods mainly contained colorimetric method, minusing method, pH differential method and HPLC;Moreover, anthocyanin has the functions of antioxidation,antimutagenic effect,antibacterial effect and cardiovascular system protection.Mainly used in food, medicine, health care products, cosmetics and hobby goods industry.
