摘要
用核磁共振氢谱研究加入二氢杨梅素(DMY)的三油酸甘油酯加热后分子中叔氢相对含量的变化,从DMY的结构入手对其抗氧化作用机理进行了分析。结果表明,DMY对油脂分子中的叔氢基团有保护作用,DMY抗氧化活性中心在其分子中B环的3个相邻的羟基上,初步揭示了DMY抗氧化机理。
The difference between the relative content of tertiary hydrogen in triolein with and without addition of dihydromyricetin (DMY ) was explored after heating . Based on the structural features ,antioxidation mechanisms of DMY were studied .The results show that DMY has protective effect on tertiary hydrogen ,and the three neighboring hydroxyls in ring-B of DMY were active centers ,which reveals the antioxidation mechanism of DM Y preliminarily .
