Food and Drink of Hangzhou in the Republic Period is a recent publication on food and drink of the Chinese people and the present paper is an analytical introduction to this outstanding endearour from the points of view of outline, historical approach, and evolution of famous dishes of Hangzhou in the period of Republic (1911-1949). This book is in fact the first comprehensive work on this subject and its research of historical data, values, position, approach and presentation hest demonstrate the preciseness and creativity of the author, not to mention its vivid and meticulous description of the habit of the local Hangzhou people related to food and drink in the Republic period. It is a classic of its kind.
