摘要
第三届亚洲食学论坛的会议文集一共收录了16国学者的78篇食学论文,内容涉及食学理论与评述、饮食安全与健康、食物历史与传承、世界饮食与交流、饮食遗产与观光等五大类。通过对文集内文章的评述,可以看出其饮食资讯多样化、健康理念普世性、学术回顾批判性、研究取径多角度的特点。
The proceedings of 3nd Asian Food Study Conference collected 78 articles by authors from 16 countries. They involve five categories including theories and bibliography on food studies; food safety and health; food history and inheritance; world foods and exchanges, as well as food heritage and tourism. According to introductions and comments, they show four features that are diversity of food information, universal idea of food health, research reviews with criticism, and multi - angle of methodology.
