摘要
维生素是维持生命活动必不可少的一类有机化合物,摄入不足或过量均可导致机体功能障碍,因其易在烹调、加工过程中损失,因此分析和评价食品和营养保健品中的维生素含量将对指导人群科学摄取维生素具有重要参考价值。水溶性维生素多为强极性化合物,其检测难度较大,因此系统介绍了微生物法、分光光度法、高效液相色谱法等水溶性维生素的检测方法,并针对多种水溶性维生素联合检测的高效液相色谱法,从同时提取、分离以及检测等方面进行综述,以期为今后开展水溶性维生素的高通量快速分析提供借鉴和参考。
Water-soluble vitamins(WSVs) are kinds of organic compounds essential to health.Excessive and inadequate WSVs intake can both cause deviant metabolic function.Because of its easy loss in cooking or processing,the analysis and evaluation of the WSVs contents in foods and nutritional supplements can provide necessary reference to the scientific intake of vitamins.Most of WSVs are polar compounds and difficult for analysis.The microbiological,spectroscopic and chromatographic methods for detecting WSVs were reviewed.The simultaneous determinations of multi-WSVs including extraction,separation and detection in a single run were focused.It will provide references for further rapid simultaneous determinations of multiWSVs in food and nutritional supplements.
