摘要 海参素有"海中人参"之称,其营养价值高,深受消费者的喜爱。本文介绍了我国海参的品种、营养价值和在养殖过程中的主要病虫害及其防治方法,综述了海参及食品品质新型检测技术(电子鼻、近红外无损检测技术)的研究进展,展望新型食品检测技术及其在海参品质检测上的应用将是今后进一步研究的方向。 Sea cucumber, which was known as 'sea ginseng', was broadly favored by consumers due to the rich nutrition value. The varieties and nutrition values of sea cucumber in China and various of pests and diseases and relevant prevention methods during the process of sea cucumber aquaculture were introduced. Two kinds of new detection methods (electronic nose and near infrared non-destructive testing technology) of sea cucumber and food quality were summarized. The new food testing technologies and their applications in quality inspection of sea cucumber would be the direction of further study.
