金针菇多糖的抗氧化活性研究 被引量:16

摘要 以金针菇为研究材料,采用水煮醇沉法和稀碱法分别提取金针菇水溶及碱溶多糖,通过水溶及碱溶多糖对羟基自由基及超氧阴离子的清除能力,评价金针菇多糖的抗氧化活性。结果表明,金针菇水溶及碱溶多糖均对羟基自由基及超氧阴离子有一定的清除能力,且与浓度呈线性关系。当金针菇水溶及碱溶多糖的浓度为1.6 mg/mL时,对羟基自由基的清除率分别为32.1%和57.5%;当金针菇水溶及碱溶多糖的浓度为2.0 mg/mL时,对超氧阴离子的清除率分别为57.4%和71.3%。表明金针菇无论水溶多糖还是碱溶多糖都能够清除自由基和超氧阴离子,具有很强的抗氧化作用。 In this paper,taken Flammulina velutipes as tested materials,the water-soluble polysaccharide and alkali-soluble polysaccharide from Flammulina velutipes were extracted with the method of boiling alcohol precipitation extraction.Antioxidant activity of Flammulina velutipes water-soluble polysaccharide and alkali-soluble polysacchadde were evaluated by the efficiency of scavenging the hydroxyl radical and superoxide anion radical.The results showed that the water-soluble polysaccharide and alkali-soluble polysaccharide of Flammulina velutipes had a certain capacity to scavenge hydroxyl radical and superoxide anion radical,and the efficiency of scavenging increased with the concentrations.When the water-soluble and the alkali-soluble polysacchadde concentration achieved 1.6 mg/mL,the scavenging percentage of hydroxyl radical reached 32.1% and 57.5 %,respectively; when the water-soluble or the alkali-soluble polysaccharide concentration achieved 2.0 mg/mL,the scavenging percentage of superoxide anion radical reached 57.4 % and 71.3 %,respectively.Therefore,the Flammulina velutipes polysaccharide had a good role in anti-oxidation and anti-mperoxide anion and had a great potential for devdopment of anti-oxidation.
