摘要
肉罐头主要是以猪肉、牛肉、鸡肉为原料,加入一定量的淀粉、食盐、香辛料、亚硝酸盐加工制成的。亚硝酸盐是一种剧毒物质,具有急性中毒反应,成年人摄入0.2~0.5 g就能引起中毒现象,摄入3 g可引起死亡。另外,根据研究表明,当人体长期小剂量地摄入含有亚硝酸盐的食品后,会对机体具有一定的致癌作用。所以,测定肉罐头中亚硝酸盐的含量具有非常重要的意义。
