摘要
目前玉米醇溶蛋白主要从玉米蛋白粉中提取,是玉米蛋白粉中的主要蛋白。因玉米醇溶蛋白具有良好的成膜性,引起了人们对其制备及结构特性的研究兴趣。玉米醇溶蛋白水解物中的支链氨基酸与芳香族氨基酸摩尔数比值较高,即高F值寡肽,具有功能活性。这些功能活性主要表现在玉米醇溶蛋白,以及其水解物的抗氧化、降血压、解酒等方面。以活性为重点,综述目前玉米醇溶蛋白及其酶解液制备及生物活性。对玉米醇溶蛋白特性及活性的深入了解,有助于玉米醇溶蛋白相关产品的研发,为进一步深加工提供参考。
Zein is mainly extracted from corn gluten meal (CGM) at present and it is the major protein in CGM. Zein is famous for its special film-forming property, which is used in coating preservation or sub-micron structured encapsulation. Zein hydrolyzate possesses biological activity and is classified as high Fischer ratio oligopeptides, which the molar ratio of branched chain amino acids to aromatic amino acid is high. The function activities of zein and its hydrolyzate are mainly used in antioxidation, lowering blood pressure, sobering up and so on. Focus on the biological activity, the process of preparing zein hydrolasate and function evaluation are reviewed. It will contribute to develop products related to zein and provide reference for further processing to clearly know the properties and activities of zein.
