摘要
研究了人工加速陈化、农家储粮和粮库储粮对小麦籽粒淀粉消化率的影响。结果表明,高温高湿人工陈化12周的小麦籽粒中快消化淀粉(RDS)和抗性淀粉(RS)含量分别下降了27.89%和28.03%,慢消化淀粉(SDS)含量增加了23.79%,淀粉水解20、50、80和120min后的消化率分别下降了27.89%、13.13%、7.34%和2.07%。粮库储粮储藏6月小麦籽粒中的快消化淀粉和抗性淀粉分别下降了3.71%和4.00%,慢消化淀粉含量增加了5.16%,淀粉水解20、50、80和120min后的消化率分别下降了3.71%、2.05%、1.77%和-0.55%。
The effects of accelerated aging, home storage and warehouse storage on digestibility of wheat starch were studied. The results indicated that rapidly digestible starch (RDS) and resistant starch (RS) were declined by 27. 89% and 28. 03%, respectively, while the slowly digestible starch (SDS) was increased by 23. 79% during accelerated aging for 12 weeks under high temperature and humidity. Starch digestibility was declined by 27.89 %, 13.13 %, 7. 34% and 2.07% for hydrolysis time of 20, 50, 80 and 120 min. RDS and RS were declined by 3. 71% and 4. 00%, respectively, while SDS was increased by 5. 16% during warehouse storage for 6 months. Stareh digestibility was declined by 3.71%, 2. 05%, 1.77% and --0. 55% for hydrolysis time of 20, 50, 80 and 120 min.
