摘要
目的对餐饮从业人员食品安全知识、态度、行为进行调查分析。方法采取抽样调查方式选定相关人员作为研究对象,开展具有针对性的问卷调查。结果选定的研究对象食品安全有关知识的知晓率为60.76%;知晓率不因为单位和岗位的不同而不同;但和研究对象的文化程度、学习专业、工龄、培训次数等有明显关系;明确食品安全重要性的比例为98.80%;养成良好食品安全习惯的研究对象比例为89.70%。结论餐饮从业人员要不断加强食品安全知识培训,不断提高对食品安全的重视,注意养成良好的食品安全习惯,确保食品安全。
Objective To investigate and analyze the knowledge, attitude and behavior of food safety of catering em- ployees. Methods Related employees were selected as the research objects by sampling ways, and targeted question- naires were carried out. Results The awareness rate of related food safety knowledge of selected research objects was 60.76%; Awareness rate was not different because of the difference of units and positions, but it was obviously related to the degree of education, study major, working years, training times of research objects; The proportion of research objects knowing clearly the importance of food safety forming was 98.80%; And the proportion of research objects forming was a good habit of food safety 89.70%. Conclusion Catering employees should strengthen the knowledge training of food safety, constantly improve the attention to food safety, pay attention to developing good habits of food safety, and ensure food safety.
