摘要 金黄色葡萄球菌是一种重要的食源性致病菌,天然化合物对多种细菌具有抗菌活性。该文综述了国外的一些植物源提取物对金黄色葡萄球菌的抗菌作用。这些植物主要包括红葱、马黛茶、牛至、蔓越莓、葡萄籽、绿茶、茴香、薄荷、蓝桉、夏季香薄荷、冬季香薄荷、橄榄、大蒜、银斑百里香、铺地百里香等,它们的提取物都是金黄色葡萄球菌的强力的抗菌剂。一些植物源提取物的主要化学成分和抗菌机制已被确定和揭示。已有研究结果表明,食品相容的和安全的植物源提取物能够被用于减少食品中的金黄色葡萄球菌及其产的毒素,是一种新颖的有潜力的天然防腐剂或杀菌剂。 Staphylococcus aureus is a major food-borne pathogen.However,natural chemicals have been reported to have antibacterial activities against a variety of bacteria.The antimicrobial effects of a few kinds of plant-derived extracts abroad were reviewed in this paper.These plants mainly included Eleutherine americana,Ilex paraguariensis,Origanum vulgare,cranberry,grape-seed,green tea,fennel,mint,Eucalyptus globules,Satureja hortensis,Satureja montana,olive,garlic,Thymus vulgaris,Thymus serpyllum and so on.The extracts derived from them were all potent antimicrobials against S.aureus.Chemical compositions of some plant-derived extracts were determined,and the mechanisms of antibacterial effects of them were elucidated.The results of previous studies suggested that food-compatible and safe plant-derived extracts could be used to reduce S.aureus and even toxins produced by the pathogen in foods.Thus,the plant-derived extracts were potential to be novel natural preservatives or bactericides.
