摘要
鲜度是评价水产品品质的一项重要指标,水产品的价值大多取决于其鲜度的高低。目前,水产品的表征方法包括感官评价、化学方法、微生物学方法及其他评价方法。对水产品表征方法进行综述,对常用水产品评价方法优缺点进行分析,最后对鲜度表征技术进行总结和展望。
Freshness is an important indicator for the evaluation of aquatic product The level of the freshness depends on value of aquatic product. And these reviews provide and an overview of methods of freshness characterization and evaluation in aquatic product, the advantages and disadvantages of common methods were discussed. Finally, the future technologies of freshness characterization and evaluation were summarized and viewed.
