摘要
茶叶色素是存在于茶鲜叶和成品茶中的一类有色物质,对茶叶风味品质的形成发挥至关重要的作用。本文从茶叶色素的分类、形成、分析测定及其对茶叶品质的影响等方面进行了综述,以期为进一步开展茶叶色素研究提供参考。
Tea pigments, the colored substances which existed in the fresh tea leaves and tea products, play a vital role in tea quality formation. In the present paper, we reviewed the classification, formation, determination of tea pigments and their effects on tea quality, etc., hoping to provide a reference for the future study on tea pigments.
