摘要
油茶籽油脂肪酸组成和生理活性与橄榄油相似,其中单不饱和脂肪酸含量高达85%以上,是一种很有发展前景的特种食用油。油茶籽油中含有约1%的不皂化物,主要包括生育酚、甾醇、多酚、角鲨烯和类胡萝卜素等,这些生理活性物质具有防治心血管疾病等功能。但目前对这些微量物质的具体种类和相应含量还缺乏较系统的研究,本文概述了油茶籽油中微量物质的种类、含量和检测方法,及其在不同加工条件下含量的变化。
Fatty acid composition and biological activity of camellia seed oil is similar to olive oil, of which con- tent of monounsaturated fatty acids is more than 85%. It is a promising specialty edible oil. Camellia seed oil contains about 1% unsaponifiables, including tncopherols, stcrols, polyphenots, squalene and carotenoids. These physiological active substam:es play a protective role against cancer and cardiovascular diseases. However, there is a lack of systemai- it' study on specific kinds and relevant content of these micro materials. Types, contents and detection method of these micro materials in the camellia seed oil were summarized, as well as content changes under different processing condi- tions.
