History,reality and future of food additives

近年来,一连串的恶性食品安全事件,将食品添加剂演变成整个社会批评与指责的对象,但事实上,食品添加剂不是恶魔,而是人类社会基于自身生产发展的需要而做出的价值选择。从历史的视角看,食品添加剂具有概念历史、兴起历史、应用历史和文化历史等四个层面的内容;从现实作用看,食品添加剂则表现为化学性质、现实规模、现实贡献和现实问题等四个方面;从未来展望看,食品添加剂前途光明,将在规模、工艺和功能三个层面获得巨大发展。所以,食品添加剂已成为人类生活的一部分,人类社会离不开食品添加。

In the past recent years, a series of food safety incidents have turned food additives into the object that is be- ing criticized and accused by the whole society. However, the fact is that food additives are not demons, but the value choices made by the human society based on their production and development. In the perspective of history, food ad- ditives have the history of concept, the history of rise, the history of usage, and the history of culture. In the perspec- tive of realistic role, food additives embodies the chemical nature, the realistic sale, the realistic contribution, and he realistic problems. In the perspective of future prospect, food additives have a bright future, which will develop quick- ly in scale, and technology and function. Therefore, food additives have become a part of human life, and the human society cannot be independent from food addictives.
