摘要
在气温超过30℃时,收集了一批来自6个鸡种的64周龄褐壳蛋鸡同一天的鲜蛋,在冷藏柜1-4℃储存,分别在第3天、第5天、第7天、第11天、第15天和第63天检测鲜蛋的主要蛋品性状。结果表明:储存期内褐壳鸡蛋哈夫单位没有发生显著变化,64周龄褐壳蛋鸡的鸡蛋哈夫单位服从正态分布,平均数为71.5,标准差为10.5。夏季鸡蛋哈夫单位很低的鸡蛋在冷藏前就已经存在。低温储存前后的浓蛋白变化不显著,而蛋黄变化显著。哈夫单位和蛋黄指数可作为鸡蛋内部品质的重点指标。
When the room temperature was over 30 °C the eggs laid by 6 varieties of 64-week-oldbrown shell egg breeder birds on the same day were collected and stored at 1 - 4 °C ,and those brown shell eggs' quality characters were tested respectively on the 3rd, 5th, 7th, 11th, 15th and 63rd days. The results showed that the eggs' Haugh units varied insignificantly within the 63-d storage period; The eggs' Haugh units obeyed normal distribution,and their mean and standard deviation were 71.5 and 10.5 respectively. In summer some eggs' Haugh units were very low before cold storage. Before and after the storage, the thick albumen did not Change significantly but the yolk changed significantly. So Haugh unit and yolk index could be used as key indicators of internal quality of egg.
