摘要 江苏餐饮业要持续、快速发展必然需要走标准化建设之路。江苏餐饮业虽然已经初步制定了较为规范的标准化文件,但标准化现状不容乐观,主要表现在:标准化水平较高的产品不多,只有面点标准化程度较高;快餐、小吃、休闲食品市场广阔,但高标准化水平的企业不多;正餐企业标准化进展缓慢。江苏餐饮业应该扩大面点企业优势并做大做强;政府及相关机构应加强引导,构建全省的快餐业态分布;还要继续做好休闲餐饮的品牌推广,保持可持续发展的能力,并稳步推进、支持正餐的标准化建设。 The sustained and rapid development of catering business in Jiangsu enforces the business to stand- ardization. Although standard documents have been developed initially, the situation is not optimistic. This is manifested in the following aspects: pastry is the only product with relatively high standardization level; fast food, snack and leisure food have broad market prospects, but with low-level standardization; standardization of dinner business makes slow progress. Efforts should be made by the catering business in Jiangsu by enlar- ging pastry' s advantage and doing big business ; building a normal distribution of fast food industry with the guidance form local government and other related organizations ; continuing the brand promotion of leisure food industry and steadily promoting the standardization of dinner business.
