气相色谱分析是一门具有高选择性、高分离效能、高灵敏度特点的分离分析技术。气相色谱分析技术应用于白酒生产,大大促进了白酒生产的技术进步和产品质量的提高。准确测定白酒中醇、酯、酸、醛这些香味组分的含量是白酒质量控制分析的关键所在,采用毛细管柱和填充柱气相色谱分析法,对白酒中大量微量成分的不断深入的剖析,为白酒生产的中间过程质量控制,产品质量把关,新产品研发,白酒内在质量鉴评和风格香型的鉴定等提供科学的依据。
Gas chromatography analysis is a highly selective separation and analysis technology with high separation efficiency and high sensitivity. Application of gas chromatographic analysis techniques in liquor production contributed greatly to the improvement of technological progress and product quality. Accurate determination of liquor fragrance ingredients including alcohols, esters, acids, aldehydes is the key to liquor quality control analysis. Using capillary and packed column, gas chromatography was used to analyze a large number of trace element which provide a scientific basis for the quality control of intermediate liquor process, product quality control, new product development, the intrinsic quality evaluation, and the flavor and style identification.
