摘要
为了客观评价中性电解水对鲐鱼贮藏保鲜效果,分别检测了普通贮藏方式中和中性电解水贮藏方式中的鲐鱼鱼肉挥发性盐基氮(TVB-N)值、菌落总数、色度值、质构和气味指标,结果显示,中性电解水保鲜效果优于普通贮藏方式,其中中性电解水碎冰贮藏效果最为显著(P<0.05),此项研究有利于鲐鱼运输和加工过程中鲐鱼贮藏保鲜技术的发展。
In order to objectively evaluate efficacy of Pneumatophorus japonicus on preservation and fresh-keeping with neutral electrolyze water (NEW), determination of the total volatile basic nitrogen (TVB-N) values, aerobic colonies, chromaticity values, texture and the volatile odor of P. japonicus with ordinary storage methods and the NEW were carried, respectively. The ultimate results manifested that efficacy with NEW was superior to ordinary storage methods, especially the measure of preservation with the neutral electrolyzed water ice was significant effective (P〈0.05). The research could benefit and support the development of technology of P. japonicus on preservation and fresh-keeping in transport and process.
